Blue Hawaiian

After a 30-year hiatus, Neil Perry's Blue Water Grill returns with a six-day pop-up in the heart of Sydney. An '80s-style drinks list features this cool summer original - a refreshing Pampero Blanco based cocktail with sweet hints of pineapple.

Ingredients

  • • Ingredients:
  • • 30ml Pampero Blanco
  • • 15ml Blue Curacao
  • • 15ml pineapple syrup
  • • 120ml lemonade
  • • ½ tsp malic acid

  • To garnish:
  • • Slice of pineapple
  • • Slice of lime

Method

Combine ingredients one by one in a 200ml glass bottle. Seal, and keep in fridge for one hour until chilled. Serve in bottle or in a highball glass with cubed ice. Garnish with a slice of pineapple and lime if served in highball glass.
