Rosetta’s summer mocktail to cool you down

Beat the heat with Rosetta’s Finocchio mocktail this summer. A blend of unique savoury flavours balanced with bright, fruity notes, this non-alcoholic tipple is the perfect alternative for those sticking to a dry January diary.

Mocktails are a fresh, fruity and a light alternative to an alcoholic drink. They emulate the same flavours and textures of a real cocktail and are ideal for those cutting down on alcohol during the New Year.

Rosetta’s Finocchio mocktail, named after its key ingredient, fennel, bursts with hints of cranberry and passionfruit. The addition of egg whites creates a smooth and silky mouthfeel, similar to a whisky sour.

This drink also incorporates Seedlip Spice 94, an innovative product designed to carry the same taste and consistency of gin-like spirits.

Ingredients

  • 40ml Seedlip Spice 94
  • 2 slices of fennel
  • 40ml cranberry juice
  • 20ml passionfruit syrup
  • 20ml lemon juice
  • 15ml egg whites

To garnish

  • Flamed orange twist
  • Fennel frond

Method

Muddle fennel and lemon juice in a cocktail shaker. Add remaining ingredients and shake well. Strain and serve in a coupe glass. Garnish with a flamed orange twist, or fennel frond.
